Iceberg Select™ Mussels in the Corner

Ingredients
  1. 2 kg / 4 lbs Iceberg Select™ mussels (cleaned and drained)
  2. 30 ml / 2 tablespoons butter
  3. 250 ml / 1 cup Blond Beer
  4. 3 green onions (finely chopped)
  5. 30 ml / 2 tablespoons fresh parsley (finely chopped)
  6. Pinch of thyme
  7. 1 small bay leaf
  8. Salt and freshly ground pepper
  9. 30 ml / 2 tablespoons finely chopped fresh parsley (put aside for the end)
Instructions
  1. In a large saucepan, melt butter and sauté the green onions on medium heat for about 3 to 4 minutes.
  2. Add the parsley, the thyme, the bay leaf.
  3. Add the beer.
  4. Add salt and pepper to taste.
  5. Increase heat to high and bring to a boil.
  6. Add Iceberg Select™ mussels, cover and cook until mussels are opened for about 7 - 10 minutes. Discard any uponened mussels.
  7. Move the saucepan several times.
  8. Withdraw the saucepan from the heat. Put mussels in deep, large plates.
  9. Sprinkle left over parsley over the mussels and serve.
