Basil and Tomato Mussels

Ingredients
- 2 kg / 4 lbs Iceberg Select™ mussels
- 50 ml / 4 tablespoons olive oil
- 8 tomatoes (peeled and mashed)
- 6 garlic cloves finely chopped
- Freshly ground pepper to taste
- 1 bouquet garni (fresh parsley, thyme, and bay leaf in a bundle)
- 1 bouquet of basil
Instructions
- In a large saucepan, heat the oil and add the tomatoes.
- Add the bouquet garni, the garlic, the pepper, and cook approximately 10 minutes.
- Add Iceberg Select™ mussels, cover and cook until mussels are opened for about 7 – 10 minutes. Discard any unopened mussels.
- Remove mussels from the saucepan and keep the cooking juice aside.
- Add basil to the cooking juice and poor over the mussels.
- Serve immediately and enjoy!
