  1. 2 kg / 4 lbs Iceberg Select™ mussels
  2. 50 ml / 4 tablespoons olive oil
  3. 8 tomatoes (peeled and mashed)
  4. 6 garlic cloves finely chopped
  5. Freshly ground pepper to taste
  6. 1 bouquet garni (fresh parsley, thyme, and bay leaf in a bundle)
  7. 1 bouquet of basil
  1. In a large saucepan, heat the oil and add the tomatoes.
  2. Add the bouquet garni, the garlic, the pepper, and cook approximately 10 minutes.
  3. Add Iceberg Select™ mussels, cover and cook until mussels are opened for about 7 – 10 minutes. Discard any unopened mussels.
  4. Remove mussels from the saucepan and keep the cooking juice aside.
  5. Add basil to the cooking juice and poor over the mussels.
  6. Serve immediately and enjoy!
