Iceberg Select™ Mussels in the Corner

Ingredients
- 2 kg / 4 lbs Iceberg Select™ mussels (cleaned and drained)
- 30 ml / 2 tablespoons butter
- 250 ml / 1 cup Blond Beer
- 3 green onions (finely chopped)
- 30 ml / 2 tablespoons fresh parsley (finely chopped)
- Pinch of thyme
- 1 small bay leaf
- Salt and freshly ground pepper
- 30 ml / 2 tablespoons finely chopped fresh parsley (put aside for the end)
Instructions
- In a large saucepan, melt butter and sauté the green onions on medium heat for about 3 to 4 minutes.
- Add the parsley, the thyme, the bay leaf.
- Add the beer.
- Add salt and pepper to taste.
- Increase heat to high and bring to a boil.
- Add Iceberg Select™ mussels, cover and cook until mussels are opened for about 7 - 10 minutes. Discard any uponened mussels.
- Move the saucepan several times.
- Withdraw the saucepan from the heat. Put mussels in deep, large plates.
- Sprinkle left over parsley over the mussels and serve.
